Brooki Bakehouse, the internet’s favourite bakery known for its amazing cookies and brownies, is poised to open its first expansion location, with a pop-up store at Brisbane Airport’s Domestic Terminal.
It will mark the first time the brand which has 4 million followers worldwide has traded outside its Brisbane base in Fortitude Valley.
“So many of our customers would come and say, ‘Oh I’m on my way to the airport so I’m dropping in to buy a gift before flying,’ so it makes sense for our next location to be at the airport so that people can just grab and go,” according to Brooki Bakehouse founder Brooke Bellamy.
The store which will open Friday is located near gate 25 in the Domestic Terminal, where around 50,000 passengers pass through each day during the school holidays.
“Brisbane Airport is delighted to be the first location for the expansion of the Brooki Bakehouse brand,” according to Toby Innes, Head of Commercial Property Development at Brisbane Airport.
“We know there’ll be kilograms of Brooki delights boarding flights to the more than 60 places across Australia connected to Brisbane Airport and dozens of locations around the world. It is another case of our airport proudly showcasing the very best of what Queensland has to offer and creating jobs through this powerhouse local brand."

How popular is Brooki globally right now?
“We have 4 million followers on social media, we ship across Australia, the United States, New Zealand, across Asia to Malaysia, Singapore, Hong Kong, Japan and then the cookbook is also shipping worldwide. It has become a best-seller within 24-hours in Australia, and it’s also hit the top-100 list in the United States on Amazon.”
The store is not the only project you have on the go is it?
“Very crazy, so we open on Friday here at Brisbane Airport, and my baby due date is the following Friday so I’m just hoping that nothing happens out of line, but if it does, we’ll cross that bridge when we come to it. But yes, baby on the way, opening our second store and also my cookbook is 4 weeks away as well, so it’s a very big year.’
What will the Brisbane Airport store have to offer travellers?
“We’ve got all of our best-selling flavours that we already ship around the country, but you can get them made fresh on the day. We’ll have all of our brownies, which in some flavours is starting to outsell cookies. We’ll have cupcakes and then all of our merch as well. We sell a lot of merch because people love the brand and then want to bake from home, which is perfectly timed with the cookbook coming out.”
What’s the secret to the success of Brooki?
“People just love following the journey with me. We started out with this tiny little bakery with 41 square metres. It was only me working by myself. I would always work 15 or 16 hours a day and just kept going until it became popular. So by sharing behind the scenes of what that looks like, you’re the one that’s vacuuming and mopping the floors, and doing social media and responding to emails and designing the packaging and designing the logo. There’s so much that goes into it, for people to see behind the scenes, by taking them on the journey, they just want to be a part of it.”
Brooke will be at the opening this Friday at 7am in the Domestic Terminal, as long as baby Brooki doesn't arrive first.
